Caciotta is a dairy product that, before being marketed, is left to mature for a period greater than 30 days; in this way the cheese acquires some taste and traditional characteristics that differentiate it from other traditional dairy products.

The ripening of a cheese, that is the time interval in which it is subjected to a maturation, salting and rest treatment, has a crucial effect on the characteristics of these products, on their taste and nutritional properties. Indeed the dairy ripening always changes the flavour, smell, colour and consistency of a cheese. On the other hand, the ripening also changes the cholesterol values which are present in the product, which is similar to the one in meat. Indeed owing to ripening, the fats in the cheese break down (namely they undergo a "lipolysis" process), thus making the aged product more "digestible".

The only ingredient that is added to milk and rennet in ripened cheeses is salt, even if, in our caciottas it is present in small quantities: indeed it is the latter that makes them rich and flavourful, as well as ideal to enjoy with vegetables, which contain potassium (an "antagonist" salt with respect to sodium).

Caciotta is excellent, for example, even with acacia honey and fig jam, combined also with oilseeds, such as nuts and hazelnuts.
