Stracchino (from the Lombard word “stracch” which means tired) is an Italian soft cheese which undergoes a short ripening, produced with whole cow's milk.

It is a kind cream cheese, with no crust, white coloured and with soft dough, made with whole cow's milk, it is aged in ten or twenty days at the most.

Originally produced in Lombardy, the etymology of the name harks back to the use of some milk coming from cows which were "stracche" (tired, in Lombard) owing to the transhumance in the valley bottom after the summer mountain pasture, and therefore they produced little milk.

Another version indicates its origin in the use of milk from cows which were fed in winter with grass gathered from water meadows, which was consequently poor in nourishment. The Cistercian monks (coming from France), who had founded the abbeys in the south of Milan, taught the farmers how to make water channels in order to avoid any stagnation of marshy waters, which was the main source of malaria. Moreover, they had also taught the techniques of the water meadows, where the water, flowing constantly, did not freeze and allowed an additional cut of the grass in the winter to provide a supplement to hay.
The milk that was obtained in this way from cows in the winter was poor in content and provided a weary or “stracco” (tired) cheese; hence the name "stracchino".

In Valtellina and in the provinces of Pavia and Piacenza the word "stracchino" is also used to indicate gorgonzola.

In addition to Lombardy, also Tuscany has included stracchino in the list of traditional Italian agricultural food products
